Roasted Mixed Veggies

So for the last few weeks these veggies have been something I look forward to at every meal. It's just something one evening I threw together And it turned out so good so I wanted to share with you!!! 
You can switch up your veggies or use what you have. This is my recipe: 

              Roasted veggies 

1 zucchini quartered and thickly sliced 
1 yellow squash halved and sliced 
1/2 red onion sliced into slivers
1 red pepper, sliced 
1/2 box baby Bella mushrooms, halved

1tsp basil 
1tsp oregano 
1/2 tsp thyme 
Salt and pepper. 
 Toss lightly with olive oil just enough to lightly cover. 
Add all ingredients to rod iron skillet lightly brown veggies. 
Next add entire skillet to broil for about 7 mins or until veggies are roasted. 

Complete meal with steak or chicken or any protein and its amazing!!! Enjoy!!
